Lentils:
Organic lentil and beetroot tabbouleh
Ideal as a vegetarian main or as a healthy
side dish, this recipe is gluten-free, low in
calories and will leave you feeling
satisfied.
Ingredients:
• Mint (dried) x 2 to 3 pinches or to taste
• Beetroot (peeled & quartered) x 2
• Quinoa (cooked) x 250g
• Lemon (just the juice) x 2
• Spiral Organic Lentils (drained) x 400g
• Chives (fresh) x a small handful or to taste
Ingredients:
• Parsley (flat-leaf) x 2 handfuls or to taste
• Red apple (peeled & sliced into quarters) x 1
• Spiral Organic Extra Virgin Olive Oil x 4 tablespoons
• Spiral Organic Chick Peas (rinsed & drained) x 400g
• Cumin (grounded/powdered) x 1 teaspoon
• Radishes x 200g
Method:
• Grab a food processor and add in the radishes, beetroot,
chives, apple, mint, parsley and the cumin.
• Blitz until all ingredients have been chopped up into small
pieces.
• Transfer ingredients into a large bowl and mix in the Organic
Extra Virgin Olive Oil, Organic Chick Peas, quinoa, Organic
Lentils and lemon juice. Remember to slowly taste the
lemon juice before adding it all in.
• Serve on a large plate or platter and garnish with some extra
parsley leaves.
