6 Rasas In Ayurveda
Six tastes are referred to as "rasas" in Ayurveda.
The food we prepared must contain all six rasas
in different amounts. The tridosha balancing
food contains a balance of six rasas. These six
rasas are sweet, sour, salty, bitter, and
astringent.

Impacts of rasas on Ayurveda
Tridosha
Vata is made from the sky and air elements. We need food with earth
elements to balance it out. Sweet, salty, and sour foods contain heaviness
like earth, balancing Vata dosha. Light food already has the quality of Vata
so it increases Vata.
Pitta is made up of fire and water, and the fire makes the nature of pitta
hot. To balance pitta, foods with sweet, bitter, and astringent flavors,
such as green vegetables, sweet fruits, lentils, and so on, are essential.
Pungent, bitter, and astringent tastes balance the Kapha dosha. Since
Kapha is made of earth and water elements, to balance it, we need light
foods with heat, such as spices, green leafy vegetables, and grains like
dry oats, sprouts, etc.

Food qualities and their impact
Just like there are six tastes, there are six food qualities: light,
heavy, oily, hot, cold, and dry.
Wheat cheese, curd, cottage cheese, etc. are heavy foods.
Barley, corn, spinach, and apples are included in light
food.
Oils and dairy foods are included in oily foods.
Beans, corn, and barley in dry food.
All heated food and drinks are in hot food, and all cooling
food and drinks are in cold food.

How to balance tridosha?
To balance Vata, you need oily, hot, and heavy food.
To balance pitta dosha, one should consume oily, heavy, and
cold food.
To balance Kapha dosha, one must consume light, hot, and dry
food.
Ayurveda also contains a list of general foods and drinks that
describes the impact of each fruit, oil, spice, and dairy product on
each dosha.

Importance of herbs in
Ayurveda
Tridosha-balancing herbs have a great impact on different doshas.
Ginger, black pepper, big cardamom, and other warming herbs
are highly beneficial for Kapha dosha as they balance their cold
nature.
Cinnamon, cumin, ginger, and cardamom are useful for Vata
dosha.
Cinnamon, dry coriander seeds, coriander leaves, fennel, and
dill leaves are useful for pitta dosha as they provide relief from
the heat.
