It usually starts in the middle of a busy shift. Orders are stacking up, the cutting board is full, and a knife that worked fine in the morning suddenly feels sluggish. Instead of slicing cleanly through meat, it drags and tears, slowing everything down. A butcher applies more pressure, adjusts their grip, and tries again. It works, but not well, and definitely not safe.
