Unroasted coffee beans are natural in every way, and the process of roasting would neither change the beans nor the moisture of the beans at all. Colour-wise, the beans have some kind of muted green or grayish-green colour, which is a stark contrast to the roasted brown ones. Some people, however, use them for specialty brewing or to roast themselves at home; others just consume them for health-related reasons.
